Mexican coffee is typically known to have notes of chocolate, caramel, and nuttiness. Since this coffee went through the natural process instead of a washed process, fruity notes come through, offering that unique cherry note presented here.  

How producers dry and harvest the coffee bean affects the flavor**

With natural coffee, farmers leave the whole fruit intact to dry in the sun. As it dries, the rich sugars soak deep into the seed. This creates a sweet, heavy-bodied cup with bold fruit notes. With washed coffee, farmers strip the fruit away immediately. Only the bare seeds dry in the sun. This creates a very clean, crisp, and balanced cup of coffee.

For this Limited coffee, you're getting the nutty base of a Mexican coffee as well as the fruity overtones of a natural processed coffee.
